Right in the heart of Melbourne, Federation Square shouts out with its modern facades…and its interesting restaurants. The most interesting at the moment is definitely Mabu Mabu. Mabu Mabu first opened at nearby South Melbourne Market in 2018 by Nornie Bero. Originally from the Komet Tribe of the Meriam people in the Torres Strait, she has been a professional chef for over 25 years. Here, she makes native ingredients the hero of every dish, including the hot chocolate. This is infused with wattleseed, the seeds of Australia Acacia, which tastes nutty and earthy, unlike any other flavour but bright and inviting, maybe a bit of coffee and caramel notes. While wattleseed is an Australian native, this is the only wattleseed hot chocolate I have found served on my travels around the country surprisingly. It is easy to make at home, and I do this often, but I don’t have this view at home!
