Theirry’s Chocolate was founded by French born chocolatier Thierry Busset. He has an impressive CV, having done stints at various three-star Michelin restaurants. His pastries and chocolate bonbons don’t disappoint. They are not only visually stunning but delicious. Vancouver is lucky to have him!

The hot chocolate was made of a 70% dark chocolate (origin listed as Venezuela) topped with whipping cream and a bit of cracked pepper and served with a piece of florentine. He seems to use Cluizel couverture in some of his chocolates but I’m not sure if this drink was also made with that chocolate. The idea of cracking a bit of pepper on top of a hot chocolate is a great one, and one I’ll try again. 

It was a bit cold when we visited, but the house made sodas look very interesting, with flavours such as apple lavender, white peach and ginger raspberry. They also offer several hot chocolates outside of Vancouver Hot Chocolate Festival time including a pistachio hot chocolate and another with hazelnuts.
